Recipe
Butter 2 tbsp
Onion chopped 2 tbsp
Flour 4 tbsp
Milk 1 cup
Coriander leaves chopped 2 tbsp
Hard boiled eggs (mashed) 4
Fresh cream 2 tbsp
Lemon juice 1 tbsp
Salt ½ tsp heaped
Black pepper ½ tsp
Mustard ½ tsp
Bread crumbs 2 cups
Eggs 2
Method
Heat 2 tbsp butter in a pan, add 2 tbsp onion, fry until soft, stir in 4 tbsp flour with ½ tsp salt, ½ tsp pepper and ½ tsp mustard powder, remove from heat, gradually stir in 1 cup milk, stir over low heat until mixture boils and thickens, cool, add in 2 tbsp coriander leaves, 2 boiled and mashed eggs, 2 tbsp cream, 1 tbsp lemon juice and mix well, shape into crockets, dip in beaten eggs, roll in bread crumbs, deep fry till light golden.
